This recipe comes from the cook book "Savoring the Southwest"
List of Ingredients
1 pork tenderloin, sliced 1/2 inch thick
2 tablespoons peanut oil or vegetable oil
salt and pepper to taste
1/8 teaspoon allspice
1/8 teaspoon thyme
1/4 cup minced green onion
1 garlic clove, minced
1 cup white wine
1 cup heavy cream
10 or 12 sliced mushrooms, sauted in 1 tablespoons butter.
Instructions
Saute pork in hot oil-2 minutes on each side. Add seasonings. Add onion and garlic. Cover pan and cook slowly 5 to 6 minutes. Remove pork and keep warm while making sauce. Pour wine in sauce pan. bring to boil. Reduce mixture to half. Pour in cream. Boil to thicken. Add the sauted mushrooms. Return pork to pan. Baste. Serve over hot rice or noodles. Makes 4 servings.
I have made the notation to try sour cream instead of heavy cream. Can't remember if I ever tried it.
