    CHICKEN SALAD

    Recipe Introduction


    We often have this one for dinner served with rolls or muffins.


    List of Ingredients


    • 2 1/2 cups diced cooked chicken
    • 4 or 5 bacon strips, cooked and crumbled
    • 1 small can sliced water chestnuts
    • 1/ cup sliced celery
    • 1 cup halved red or green grapes. (red grapes makes a more colorful salad)
    • 3/4 cup mayonnaise
    • 1 to 2 tablespoons dried parsley flakes
    • 2 teaspoons finely minced onion
    • 1 teaspoon lemon juice
    • 1/4 teaspoon ground ginger
    • dash of worcestershire sauce
    • salt and pepper to tase.
    • 1 or 2 dollops of Ranch dressing (optional)


    Instructions


    1. Combine chicken, bacon, water chestnuts, celery, and grapes in a large bowl. Set aside. In another bowl, whisk together remaining ingredients. Add to the chicken mixture and toss to coat. Chill. Makes 4 to 6 servings.



    Final Comments


    Update: July 1, 2000. We had this recipe for dinner last night and just to be different I added a healthy dollup of Ranch dressing to the dressing and it made the salad even better.
