    A really good and hearty soup

    List of Ingredients




    1 stick butter
    1 small onion, chopped
    1/3 cup flour
    2 cups water
    2 cups chicken stock
    1 1/3 cups potato flakes
    2/3 cup milk
    2/3 cup heavy cream
    3 medium potatoes (baked and cubed-may leave skins on if you wish)
    salt and pepper to taste

    Optional toppings: shredded chedder cheese, crumbled bacon.

    Saute' onions in butter and add flour, stirring constantly. Add water and chicken stock and keep at medium heat. To onion mixture add potato flakes, milk, and cream; let simmer. Cut baked potatoes into bite sized chunks, add to soup and heat until all ingredients are heated. Add salt and pepper as desired. Serve topped with cheese and bacon if desired.

    Tweaks: pre cooked diced vegetables such as onions, carrots, mushrooms, celery, etc. may be added.
