    HAM AND BEAN SOUP


    List of Ingredients


    • 2 cups cubed or shredded ham
    • ham hock (optional)
    • 2 cups mixed dried beans (1 package) which have been soaked in water overnight. Then drained.
    • 1 1/2 quarts water
    • 1 cup chopped celery
    • 1 cup chopped carrots
    • 1 cup chopped onion
    • 1 cup or large can of chopped tomatoes
    • salt, pepper, rosemary, thyme and dry mustard to taste (1 + teaspoon salt and 1/ 2 teaspoon of other spices)


    Instructions


    1. Cover ham with the water, cook slowly for 1/2 hour. Add the two cups of beans which have been soaked overnight then drained. Add the rest of the ingredients and cover. Simmer for 2 1/2 hours more
    2. CROCKPOT: Rinse beans and put all ingredients in the crockpot and simmer for 8 hours.
    3. Freezes well
