    PORTUGUESE SOUP

    My mothers recipe. A good hearty soup.


    List of Ingredients


    • 1 package dried beans: red kidney, pinto, navy, black eye, grabanzo or any combination.
    • 2 large onions, chopped
    • 3 small meaty shinbones, or hamhocks
    • about 1 cup ham shredded or cubed
    • 1 Tablespoon salt
    • 2 stalks celery, sliced
    • 2 carrots, sliced
    • 2 potatoes, diced
    • 1 small cabbage, shredded
    • 1 can tomato sauce (15 ounces)
    • 3 tomatoes, peeled and chopped, or 1 15 ounce can of cubed tomatoes
    • garlic puree to taste
    • 1 ring Linguine or Portuguese sausage, sliced


    Instructions


    1. Pour 2 quarts of boiling water over the beans and let soak for an hour. Add the two chopped onions, hamhocks, ham, and salt. Simmer 2 or 3 hours.
    2. Add all the rest of the ingredients and cook slowly for another 1/2 to 1 hour.


    Final Comments


    Serve with hot bread or rolls.
