    SUE'S BEAN AND HAM SOUP


    List of Ingredients


    • 2 cups shredded ham and a ham hock
    • 1 cup chopped celery
    • 1 cup chopped carrots
    • 1 cup chopped onion
    • 1 #28 can, tomatoes, chopped
    • 1 1/2 quarts water
    • salt and pepper, to taste
    • rosemary, to taste
    • thyme, to taste
    • dry mustard, to taste
    • 2 cups beans (any kind or mixed), soaked overnight and drained


    Instructions


    1. Cover ham with water. Cook slowly for 1/2 hour. Add the beans which have been soaked overnight and drained, and the vegetables. Simmer for 2 1/2 hours. Season.
    2. Crockpot: Put all the ingredients in the pot and cook on high for 8 hours. Make sure you have soaked and drained the beans overnight.
