    • 4 frozen skinless chicken breasts
    • 1/4 cup butter
    • 1/2 cup green onion, chopped
    • 1-1/2 cups mushrooms,your choice, cut in half
    • 1/2 tsp salt
    • 1/4 tsp pepper
    • 1 garlic clove, minced
    • 2 tbs white wine
    • 1 tbs olive oil
    • 4 artichoke hears [paked in water] quartered


    Instructions


    1. Remove protective ice glaze from frozen chicken by holding undr cool running water for 1 min. Cut chicken into strips.
    2. Melt butter in large skillet over medium-high heat. Add chicken and saute until lightly browned, about 10 min. Remove chicken and set aside. Add green onions to pan and saute about 2 min. Add mushrooms,salt,pepper and garlic and continue to cook, stirring, about 2 minutes more. Add chicken,wine,olive oil and artichoke hearts; simmer 2 minutes or until internal juices of the chicken run clear.
    3. Serve with veg. and over brown rice.
