    Red Beans and Rice


    List of Ingredients


    • 1 1/2 cups onion,chopped
    • 5 garlic cloves,sliced
    • 1 15oz can red kidney beans-rinsed and drained
    • 1 15oz can pink beans - rinsed and drained
    • 1 bay leaf
    • 1 tsp oregano
    • 2 tbs chili powder [to taste]
    • 1 tsp ground cumin
    • 1 tsp coriander
    • 1 tsp crushed red pepper flakes [to taste]
    • 1 cup tomato juice
    • 1 cup cooked rice. [I use white]
    • salsa
    • GARNISHES
    • scallions--chopped
    • Fat Free Sour Cream
    • cilantro [optional]


    Instructions


    1. Heat a large nonstick skillet over medium heat.
    2. Add garlic and onion and let it cook for a moment until the onions are translucent and the garlic is browned lightly,do not burn.[ Will taste bitter.]
    3. Add the beans and bay leaf. Stir a couple of times and then add the oregano,dash of salt and the spices.
    4. Add the tomato juice and cook for a few moments. If it gets dry, add a little water.
    5. Add cooked rice and cilantro [or your favorite herb]
    6. Garnish with scallions and sour cream


    Final Comments
