One of the moistest Pumpkin Breads you'll ever eat!
List of Ingredients
1 1/4 cup vegetable oil
2 cups canned pumpkin
1 cup sugar
1 cup brown sugar
2-3.4 oz. pkg. instant butterscotch pudding mix
1 tsp. baking soda
5 eggs
2 cup flour
1 tsp. salt
1 1/2 tsp. cinnamon
1/2 tsp. ground cloves
1 1/2 cup chopped walnuts and/or *plumped raisins (optional)
*Soak raisins for 30 minutes, in just enough hot water to cover. Drain well and pat dry before adding to batter.
Recipe
In large. bowl, mix together oil, pumpkin, sugars, pudding mix, cinnamon, cloves and salt. Slightly beat the eggs, and mix into the bater. Mix in flour and baking soda until just combined. Stir in nuts and/or raisins, if desired. Spread batter into 2 waxed-paper lined 9x5 loaf pans (or 3 8x4 loaf pans). Bake at 350 degrees for 45-60 minutes or until a tester inserted in the center comes out clean. (Adjust baking time accordingly for pan size.)Remove from pan immediately and peel off waxed paper while still hot. Cool on wire rack. Freezes well.
