I used to make the filling from scratch (which I have included here), but found that after a while it would get weepy and make the eclairs soggy. Now I take the more convenient way out and use the vanilla pudding snack cups. They have a stabilizer in them that keeps them from weeping and they stay nice and creamy.... (and sooooo much easier!)
List of Ingredients
4 tbl. butter
2 eggs
1/2 c. water
1/2c. flour
1 can chocolate frosting
Filling:
1 cup milk
1 egg
1/3 cup sugar
3 tbl. flour
1 tsp. vanilla
pinch salt
Recipe
Puffs:
Bring butter and water to boil. Add flour, stir vigorously. When well mixed, add unbeaten eggs, one at a time. Beat until well blended. Drop by spoonful, 2" apart, on greased baking sheet. Bake 425 for 20-25 minutes.
Allow to cool completely before slicing small piece from top and filling with pudding. Replace top of shell and carefully spread top with chocolate frosting. Store in airtight container and refrigerate.
Filling:
Beat egg and milk together. Add sifted dry ingredients and vanilla. Cook in double boiler, stirring constantly, until thick. Cool completely.
