    Pumpkin Whoopie Pies

    List of Ingredients




    1/2 c. margarine
    1 1/2 c. brown sugar
    2 eggs
    1 c. canned pumpkin
    1 tsp. vanilla
    1 tsp. grated lemon zest or squirt of lemon
    2 1/2 c. flour
    3 tsp. baking powder
    1 tsp. salt
    1 1/2 tsp. pumpkin pie spice
    1/4 tsp. ginger
    1 can buttercream frosting**

    In large bowl, cream margarine, brown sugar, eggs, pumpkin, vanilla and lemon zest. In medium bowl, combine flour, baking powder, salt, pumpkin pie spice and ginger. Gradually add flour mixture to creamed mixture until well combined. Drop by tablespoonful onto greased cookie sheet, trying to keep all cookies the same size. Bake @ 375 for 14 minutes. Cool on wire racks. Sandwich buttercream frosting between two cookies and wrap individually.
