    The Memorial Day Parade, in the small Massachusetts town where I grew up, went right by the end of our street... so we could always count on alot of drop-in company that day. I'm still not sure whether it was to see us, or because everybody knew my mother would always have these Whoopie Pies on hand for that day! I love them as much today as I did then....... (maybe more!)

    List of Ingredients




    Batter:
    6 tbl. shortening
    1 cup sugar
    1 egg
    1 cup milk
    1 tsp. vanilla
    2 cups flour
    5 heaping tbl. cocoa
    1 tsp. salt
    1 1/2 tsp. baking soda

    Filling:
    3/4 cup shortening
    3/4 cup confectioner's sugar
    6 heaping tbl. marshmallow creme
    1/2 tsp. vanilla
    dash salt

    Recipe



    In large mixing bowl, cream shortening and sugar. Add egg and beat. Add milk and mix until well blended. In separate bowl, mix together flour, cocoa, salt and baking soda. Gradually add to wet ingredients and beat well.. Drop by spoonful on ungreased baking sheet, trying to keep all the same size. Bake at 350 degrees for 10-12 minutes. Cool on wire rack.
    Filling: Cream shortening and sugar. Add vanilla and salt. Beat well. Add marshmallow and beat until well combined.
    When cakes are completely cooled, spread cream filling between two cakes. Wrap in individual baggies or waxed paper.
