    Pina Colada Sea Scallops

    List of Ingredients

    16 large sea scallops
    1 can frozen pina colada mix, thawed (divided)
    1 8 oz. can crushed pineapple in heavy syrup (well drained)
    1/2 tsp. salt
    1 tsp. minced garlic
    fresh pineapple, cut into 1" chunks





    Recipe

    Soak bamboo skewers for at least 1 hour.
    In ziplock bag, combine scallops,1/2 c. thawed pina colada mix, salt and garlic. Squeeze out air and seal bag. Gently mix in bag. Marinate, refrigerated, for 15-30 minutes...no longer than that. In small serving dish, mix remaining pina colada mix and drained crushed pineapple. Chill while scallops marinate.

    Lightly oil grill and preheat to medium.

    Remove scallops from bag and discard marinade. Thread 4 scallops onto 2 side-by-side skewers, repeat making 4 skewers. Thread pineapple chunks onto skewers.

    Place skewers on preheated oiled grill and cook 3-4 minutes per side. Grill pineapple about 4 minutes. Remove from grill and serve with pina colada dipping sauce.
