    2 tbl. canola oil
    4 c. cooked pork (cubed)
    2 medium onions (sliced)
    3 stalks celery (sliced)
    1 can bean sprouts (drained)
    Chicken broth
    1 pkg. pork gravy mix (recommend McCormick's)
    3 tbl. cornstarch
    soy sauce to taste

    In large frying pan, saute cooked pork until starting to brown. Add sliced onions and continue cooking until onions begin to be come translucent. Transfer pork/onion mix into large dutch oven. Add celery. Deglaze frying pan with 1/2 c. chicken broth, loosening brown bits in pan. Add to dutch oven. Into dutch oven,pour in just enough chicken stock to cover pork & vegetables. Cover and simmer until celery is tender. Add drained bean sprouts. In small bowl, whisk together, pork gravy mix, 3 tbl. cornstarch and one cup canned chicken broth. Mix well and add to dutch oven. Bring to a boil, stirring constantly. Reduce heat and simmer 1 minute or until liquid in pot thickens. Add soy sauce to taste.
    Serve over crunchy chow mein noodles.
