    Teriyaki Plum Ribs

    1 slab pork spareribs

    Rub:
    2 tbl. garlic powder
    2 tsp. ground ginger
    2 tsp. salt

    Marinade:
    2/3 cup pineapple juice
    1/3 cup LaChoy teriyaki marinade & sauce

    Glazing sauce
    2 tbl. LaChoy teryaki marinade & sauce
    1/2 c. plum (or apricot) preserves or jam



    ***Double all ingredients if cooking 2 racks of ribs.

    Recipe



    Heat oven to 250 degrees
    Remove membrane from back of ribs and discard. Rinse ribs and pat dry. In small bowl, make rub.... mix garlic powder, ginger and salt. Line large roasting pan with heavy duty foil, leaving foil extended so that you can seal ribs tightly with foil later. Sprinkle ribs, front and back, with half of the rub mixture, reserving the remainder of the rub for later and bake, uncovered, meat-side up, for 2 hours. Remove from oven and turn ribs meat-side down. Combine pineapple juice & teriyaki sauce and pour over ribs. Seal foil tightly around ribs and return to oven. Bake for 1 hour. Open foil, carefully drain liquid, and sprinkle remaining rub over ribs, front and back. Return to oven and bake, meat-side up, for 1 more hour. Remove ribs from oven. Mix teriyaki sauce & jam. Heat in microwave until jam is melted. Stir and baste ribs, front and back. Bake, meat-side up, for an additional 15-20 minutes.
