    List of Ingredients




    1 medium zucchini, cut into chunks
    1 medium summer squash,cut into chunks
    1 large red or sweet onion, cut into chunks
    1 large green pepper, cut into chunks
    8 oz. mushroom, cut in half
    1 to 1 1/2 lbs small red potatoes, cut in half
    1/2 c. olive oil
    1 tsp. dried rosemary
    1 tsp. Italian seasoning
    1 tsp. garlic powder
    Sea Salt
    Pepper

    Recipe



    Preheat oven to 400 degrees.
    In small bowl, combine olive oil, rosemary, Italian seasoning an garlic powder. Mix well. Set aside.

    Spray jelly roll pan with non-stick spray. Add cut-up vegetables to pan and spread into single layer as much as possible. Pour oil mixture over veggies and with hands, mix to coat. Sprinkle with sea salt and pepper to taste.
    Roast for 35-40 minutes.
