    Misc.- Armadillo Eggs

    List of Ingredients


    1 jar (16 ounces) whole jalapeno peppers, drained

    2 cups shredded Cheddar cheese

    1 pound ground pork sausage

    2 cans (10 ounces each) refrigerated biscuit dough


    Recipe

    Preheat oven to 350 degrees.

    Slice jalapenos lengthwise to remove seeds. Stuff jalapenos with cheddar cheese.

    Divide sausage into small balls, then press into thin strips. Place 1 stuffed jalapeno into each strip of sausage. Roll jalapenos into sausage, pressing firmly.

    Arrange wrapped jalapenos on a medium-size baking sheet with sides deep enough to collect any fat from sausage. Bake 40 to 50 minutes, until sausage is evenly brown. Remove from heat and allow to cool, approximately 10 minutes.

    Arrange refrigerated biscuit dough on a medium baking sheet. Wrap 1 sausage and jalapeno roll in each piece of dough. Bake 10 to 12 minutes or until golden brown. Makes 16.
