    1 cup water
    6 tablespoons (3/4 stick) butter, diced into 1/4-inch pieces
    1 1/2 cups flour, sifted
    6 large eggs
    2 cups shredded Gruyere cheese (divided)

    Recipe



    Preheat oven to 400 degrees.

    Put water and butter into small saucepan and bring to boil over high heat. Remove from heat and stir in flour with wooden spoon all at once. Return saucepan to stove top over medium heat, stirring mixture vigorously until it thickens, about 1 minute.

    Once it begins to line bottom of saucepan, remove from heat and add eggs one at a time, continuing to stir briskly. After eggs have been incorporated, stir in 11/2 cups cheese.

    Onto baking sheet lined with parchment paper, scoop 1 tablespoon portions of dough, keeping them about 2 inches apart. Top each one with a little of the remaining cheese, then bake in preheated oven about 25 minutes. Puffs should be about 3 inches wide and high and golden brown. Serve warm as soon as they are done. Makes about 12 to 14 puffs.
