    Char-Grilled Shrimp with Coconut Butter

    List of Ingredients




    24 jumbo shrimp
    Marinade
    1/4 cup unsalted butter
    3 tablespoon pina colada drink mix
    2 tablespoon sweet shredded coconut
    1 teaspoon dark rum (optional)
    Salt
    Pepper

    Marinade:
    1/2 cu pina colada drink mix
    1 tablespoon olive oil
    1 teaspoon garlic, finely chopped

    Recipe



    Mix marinade ingredients together and marinate shrimp for at least 6 hours prior to cooking.
    After marinating shrimp, soften butter and mix with drink mix, shredded coconut, and dark rum, if desired. Blend together well. Skewer shrimp to facilitae handling on grill. Cook over open flame or under a hot broiler 3 to 4 minutes of each side. After turning once, brush with butter mixture. Continue cooking until done. Season to taste with salt and white pepper, if necessary. Serve with tropical fruits.
