    Muffin- Heavenly Angel Cornbread Muffins

    List of Ingredients

    2 cups yellow cornmeal
    1/2 cup all-purpose flour
    1 tablespoon baking powder
    1/2 teaspoon baking soda
    1 teaspoon salt
    3 tablespoons sugar
    1 (1/4-ounce) envelope active dry yeast
    1 medium onion, diced
    2 large eggs, lightly beaten
    2 cups buttermilk
    1/2 cup bacon drippings

    Recipe

    Stir together first 8 ingredients in a large bowl; make a well in center of mixture.
    Add eggs, buttermilk, and bacon drippings to dry ingredients, stirring just until moistened. Spoon into greased and floured muffin pans, filling half full.
    Bake at 400 degrees for 15 minutes or until muffins are lightly browned. Yield 2 dozen.
