    Machine, quick- Orange Gingerbread

    List of Ingredients




    Orange Gingerbread with Orange Whipped Cream

    4 tablespoons (1/2 stick) unsalted butter, melted
    1/2 cup unsulphured mild flavored molasses
    2 large eggs
    Grated zest of 1 orange
    1/2 cup packed light brown sugar
    3/4 cup buttermilk
    2 teaspoons baking soda dissolved in 1/4 cup hot water
    2 1/2 cups unbleached all-purpose flour
    1/2 teaspoon baking powder
    2 teaspoons ground ginger
    1 1/2 teaspoons apple pie spice or 1/2 teaspoon ground cinnamon
    1/2 teaspoon allspice
    1/2 teaspoon cloves
    3/4 teaspoon salt
    2 tablespoons chopped candied ginger
    Orange whipped cream (see recipe)

    Place ingredients in pan according to manufacturer's instructions. Set crust for dark if your machine offers crust control cycle. Program for the Quick bread/cake cycle. Batter will be thick. After dough is mixed, scrape down sides of bread pan with spatula if needed to be sure all ingredients are incorporated.

    When machine indicates that bread is done, check for doneness. Bread is done when it shrinks slightly from sides of pan, sides are dark brown, and top is firm to gentle pressure. If indention remains, press stop/reset cycle and program for bake only cycle. Check at intervals until loaf is done - when toothpick inserted in center comes out clean.

    When bread is done, immediately remove pan from machine. Let bread stand in pan for 10 minutes then gently turn out, right side up, to cool completely on rack before slicing. Serve warm or at room temperature with a few tablespoons of orange whipped cream on side.

    Orange whipped cream
    1 cup whipping cream
    2 tablespoons powdered sugar
    2 tablespoons Grand Marnier orange liqueur or thawed orange juice concentrate
    1/2 teaspoon vanilla extract

    Combine all ingredients in chilled bowl. Beat with electric mixer until soft peaks form. Cover and chill until needed.
