    Corn- Quick Mexican Cornbread

    List of Ingredients

    1 cup self-rising cornmeal
    1/4 teaspoon salt
    1/4 teaspoon red pepper
    1/2 cup chopped onion
    1/2 cup chopped greeen pepper
    1/2 cup (2 ounces) shredded process American cheese
    1/4 cup vegetable oil
    1 cup milk
    2 eggs, beaten
    1 (8 3/4 ounce) can cream-style corn

    Recipe

    Combine first 3 ingredients; add remaining ingredients, mixing well. Spoon into a greased 8-inch square pan. Bake at 450 degrees F for 20 to 25 minutes or until golden. Yield 6 servings.
