    Sourdough- Cheese Rolls

    List of Ingredients




    1 pkg. active dry yeast
    3/4 cup warm water(110°F, 43°C)
    1 1/2 cups sourdough starter
    3 1/2 to 4 1/2 cups all-purpose flour
    1/ 4 cup sugar
    1/4 cup butter or margarine, softened
    1 egg
    2 teaspoons salt
    1/2 teaspoon baking soda
    3/4 cup grated sharp Cheddar cheese

    Recipe



    In a large mixer bowl, soften yeast in warm water. Blend in sourdough starter, 2 cups flour, sugar, butter or margarine, egg and salt. Beat 3 to 4 minutes with mixer. Add baking soda to 1 cup flour. Stir into flouryeast mixture. Add cheese and enough remaining flour to make a soft dough. Turn out onto floured surface and knead for 5 to 8 minutes or until smooth. Place in greased bowl, turning once. Cover with a cloth. Set in warm area free from drafts and let rise 11/2 to 2 hours or until doubled in size. Punch down. Cover and let rest 10 minutes. Divide into 24 pieces. Shape into 1-inch balls. Place on greased baking sheets. Cover and let rise 25 to 30 minutes or until doubled in size. Bake at 375°F (191°C) for about 20
    minutes. Makes 24 rolls.
