    Broccoli-Cheese Casserole

    List of Ingredients





    2 packages {10 ounces each)
    frozen chopped broccoli,
    thawed and well drained
    1 cup low-fat ricotta cheese
    1/2 cup plain nonfat yogurt
    1 whole egg
    1 egg white
    1 teaspoon olive oil
    1/4 cup grated Parmesan cheese
    1/4 cup all-purpose flour
    1/2 teaspoon baking powder
    1/2 teaspoon salt
    1/2 teaspoon dried dill weed

    Recipe



    Preheat oven to 350°F. Spray a 1-
    quart round casserole or baking dish
    with nonstick cooking spray. Add
    half of the broccoli to the casserole.
    In the container of a food processor or blender, combine ricotta
    cheese, yogurt, whole egg, egg white,
    oil, Parmesan cheese, flour, baking
    powder, salt, and dill weed. Cover
    and process or blend until smooth.
    Pour the mixture over the broccoli in
    the casserole. Scatter the remaining
    broccoli over the top. Bake 35 to 45 minutes, or until a
    toothpick inserted into the center
    comes out clean. Transfer the casserole to a cooling rack and let stand
    15 minutes. Slice and serve warm.
