    Bar- Butterscotch Pecan Bars

    List of Ingredients





    1/2 cup (1 stick) unsalted butter
    1 cup plus 2 tablespoons sugar
    3 tablespoons water
    3 cups butterscotch chips, divided
    3 large eggs, beaten
    1/2 teaspoon pure vanilla extract
    1 cup plus 2 tablespoons unbleached all-purpose flour
    1/2 teaspoon salt
    1/4 teaspoon baking soda
    3/4 cup small pecan pieces
    Vanilla ice cream
    Caramel sauce

    Recipe



    1. Preheat oven to 350 degrees. Lightly grease a 13-by-9-by-2-inch baking
    pan.

    2. Combine butter, sugar and water in a large saucepan and heat to a boil
    over medium heat. Remove from heat. Add 1 1/2 cups of butterscotch chips; stir
    until melted. Stir in beaten eggs and vanilla.

    3. In a large bowl, combine flour, salt, baking soda, pecans and remaining
    1 1/2 cups butterscotch chips. Add to saucepan and mix well. Pour batter into
    prepared pan and spread evenly. Bake for 25 minutes, or until a toothpick
    inserted in bars comes out clean. Cool on a wire rack and cut into squares.

    Serve with best-quality vanilla ice cream, caramel sauce and, if desired,
    whipped cream. Makes about 2 dozen.
