    Shaped-Aunt Ann's Pineapple Cookies

    List of Ingredients





    CRUST:

    1/2pound cream cheese, softened
    2 cups sifted flour
    1 stick margarine, 1 stick butter or use 2 sticks butter, but not 2 sticks margarine

    FILLING:

    1 tablespoon cornstarch
    1 can crushed pineapple
    1 cup sugar

    For the crust: Mix together the cream cheese, flour and margarine as you would pie crust; chill at least 1 hour or longer. Divide dough into thirds and roll into a rectangle, about 1/8-inch thick. Cut into 2 inch squares. Spoon small amount of pineapple mixture into center of each square and pinch 2 corners together over pineapple. Bake 12 to 15 minutes or until light golden color. Remove to cooling rack and when cool, sprinkle with powder sugar.

    For the filling: Cook the pineapple, cornstarch and sugar over low heat in a saucepan until thickened.
