    Shaped- Chinese Almond Cakes

    List of Ingredients




    2 1/2 cups sifted all-purpose flour
    3/4 cup sugar
    1/4 teaspoon salt
    1 teaspoon baking powder
    3/4 cup butter or margarine
    1 egg
    1 teaspoon almond extract
    About 36 whole blanched almonds
    1 egg yolk

    Recipe



    1. Sift flour with sugr, salt, and baking powder into a large bowl.
    2. Using pastry blender or 2 knives, cut in butter until mixture resembles coarse cornmeal.
    3. Beat egg with 2 tablespoon water and the almond extract. Add to flour mixture, mixing with fork until dough leaves side of bowl.
    4. On lightly floured surface, knead dough until smooth. Wrap in waxed paper, refrigerate 1 hour.
    5. Meanwhile, preheat oven to 350 degrees F.
    6. Form dough into balls 1 inch in diameter. Place, 3 inches apart, on ungreased cookie sheets.
    7. With palm of hand, flatten each cookie to a circle 1/4 inch thick; press almond into center of each.
    8. Combine egg yolk with 1 tablespoon water. Brush on cookies.
    9. Bake cookies 20 to 25 minutes, or until golden-brown. Remove to wire rack; let cool.
