Makes 24 puffs
1 1/2 cups honey
1/4 cup hot water
1 cup boiling water
3 tablespoons unsalted butter
2 tablespoons sugar
1 cup flour
1 teaspoon baking powder
4 large eggs
Shortening or oil for deep frying
Cinnamon
Recipe
Combine honey and hot water.
Heat 1 cup water to boiling, add butter and allow it to melt.
Lower heat. Add sugar, flour and baking powder all at once. Stir vigorously over low heat until mixture forms a ball.
Remove from heat and cool to lukewarm, 8 minutes.
Add eggs, one at a time, beating well after each addition. Continue to beat batter until shiny.
Heat shortening in a deep pot to 360 degrees. (Pot should be half full).
Drop batter by tablespoons into hot fat and fry until golden brown. Drain on paper towels.
Place hot fritters on cake rack. Drizzle honey over top then sprinkle lightly with cinnamon. Serve hot.
