Vanilla Pudding

1/2 cup sugar
3 tbs. cornstarch
1/8 tsp. salt
4 egg yolks
21/2 cups half-and-half or milk
3 tbs. butter
2 tsp. vanilla extract
Recipe
Combine sugar, cornstarch and salt in a small saucepan. Whisk together eggs and half-and-half in a medium bowl.
Add egg mixture to pan, stirring constantly over medium heat, until pudding thickens, 10 minutes.
Do not allow to boil. Remove from heat; stir in butter and vanilla.
Pour into custard cups or a large bowl, placing plastic wrap directly on the surface of the pudding.
Refrigerate until chilled, 4 hours or overnight.
