    Cod- Fast and Spicy Alaska Cod

    List of Ingredients

    1 tablespoon ground cumin
    1 1/2 teaspoon chili powder
    1/2 teaspoon cayenne pepper
    1 1/2 teaspoon salt
    2 Alaska cod fillets ( 5 ounces each), thawed if necessary
    Olive oil
    Lime wedges

    Recipe

    Mix together spices and salt in a small bowl. Brush cod fillets lightly with olive oil and sprinkle each fillet with 1/2 teaspoon spice mixture, coating each side. Store remaining spice mixture in a tightly covered container for later use. Place fillets in a microwave safe dish and cover with plastic wrap or waxed paper.
    Microwave on high power for 2 1/2 to 3 minutes, or until fish just flakes when tested with a fork. (Or place cod on a broiling pan and broil 5 to 6 inches from heat for 10 minutes per inch of thickeness, or until fish just flakes when tested with a fork. Remove from oven and let stand 2 minutes. Serve with lime wedges.
