    List of Ingredients




    1 pound jumbo shrimp
    Half-and-half or light cream
    Flour
    Oil
    1 egg yolk
    Juice of 1/2 lemon
    1 stick butter
    1 to 2 garlic cloves, minced
    1/2 cup chopped parsley
    Chopped chives, to taste

    Recipe



    Clean and devein shrimp and soak in half-and-half for 10 minutes. Drain and dredge in flour (see note).

    Sauté in oil over medium heat for 5 minutes. Do not turn (this is vital to the success of the recipe).

    Remove shrimp and place on a baking pan in a preheated oven set on broil. Broil 5 minutes. Pour on sauce and serve.

    For sauce, mix egg yolk and lemon juice in a heavy saucepan. Add half of the butter and stir over low heat until melted.

    Add garlic and remaining butter. Stir briskly until butter melts and sauce thickens. Add parsley and chives.

    Note: The recipe doesn't call for it, but I would add salt and pepper to the flour prior to dredging. To spice it up a bit, maybe just a little bit of cayenne pepper, too.
