    Serves 4
    Preparation Time: 25 minutes

    4 salmon filets, 8 ounces each
    1 tablespoon butter
    1 cup fish stock
    2 tablespoons white wine
    2 tablespoons dry vermouth
    8 tomatoes, peeled, seeded, chopped
    1 tablespoon fresh basil, julienned
    2 tablespoon Pernod
    Salt and pepper to taste

    Recipe



    In saute pan, cook the salmon with the fish stock and 1 tablespoon butter. When cooked, remove the fish from the pan and place on a serving dish.
    To the saute pan, add the wine, vermouth, tomatoes, basil, Pernod and the remaining butter. When sauce is hot and bubbly, spoon over the salmon and serve.
