    Recipe adapted from one from Bistro Provence Cuisine, 2399 N. Federal Highway, Boca Raton, 561-368-2340.

    List of Ingredients





    3 cups beef broth

    3 cups demi-glace

    2 cups chardonnay

    3 small onions, sliced

    3 carrots, sliced

    1 small rib celery, sliced

    3 bay leaves

    1 tablespoon Herbes de Provence

    5 cloves garlic

    2 tomatoes, diced

    4 (1- to 1 1/4-pound) lamb shanks

    Recipe



    In a large nonreactive pot, combine all ingredients. Cover and refrigerate 24 hours. Remove from refrigerator and cook, covered, in a preheated 350-degree oven 4 hours. Makes 4 servings.

    Per serving: 360 calories, 25 percent calories from fat, 39 grams protein, 27 grams carbohydrates, 4 grams total fiber, 10 grams total fat, 109 milligrams cholesterol, 1418 milligrams sodium.
