    SHANNON SHANKS
    SERVES FOUR


    4 lamb shanks
    1 teaspoon dill weed
    1/2 teaspoon oregano
    1 teaspoon rosemary
    1 large clove garlic, minced
    1 large onion, thinly sliced
    1 can (8 ounces) tomato sauce
    1/4 cup brown sugar
    1 cup dry white wine
    1 1/2 teaspoons salt
    1/4 teaspoon black pepper


    Recipe



    While humming a chorus of "Paddy's Green Shamrock Shore," place the lamb shanks in a substantial oven pot. Add all the other ingredients, cover the pot and cook in a 300-degree oven for 3 hours.


    Remove cover, return to the oven for another 30 minutes, then remove the shanks to a warm platter. Put the pot over an oven-top burner and boil the sauce until reduced by half. Pour over the shanks and serve.
