    Pork- Zesty Barbecued Spareribs

    List of Ingredients




    4 pounds pork spareribs, cut into 2-rib portions
    1 6-ounce jar prepared white horseradish
    3/4 cup packed brown sugar
    1 tablespoon Worcestershire Sauce

    About 2 hours before serving or day ahead:
    1. In 8-quart saucepot or Dutch oven over high heat, heat spareribs and enough water to cover boiling. Reduce heat to low; cover and simmer 1 hour or until spareribs are fork-tender. Remove ribs to platter. If not serving ribs right away, cover and refrigerate.
    About 1 hour before serving:
    2. Prepare outdoor grill for barbecuing.
    3. Meanwhile, in small bowl, mix horseradish, brown sugar, and Worcestershire.
    4. Place ribs on grill over medium heat; cook 15 to 20 minutes until heated through, turning ribs often and brushing with horeseradish mixture frequently during last 10 minutes of cooking. Makes 4 main-dish servings.

    To Broil in Oven:
    About 1 1/2 hours before serving or day ahead prepare ribs as above in step 1. About 30 minutes before serving, arrange cooked spareribs, overlapping slightly, on rack in broiling pan. Place pan in broiler with spareribs about 5 inches from source of heat; broil ribs 10 minutes, turning them once, mix horseradish, brown sugar, and Worcestershire. Brush spareribs frequently with horseradish mixture and turn them occasionally; continue broiling 10 minutes or until spareribs are heat through.

    Each serving: About 880 calories, 54 g fat, 214 mg cholesterol, 260 mg sodium.
