    Angel Hair Pasta with Olive Oil and Garlic

    Recipe Introduction

    Recipe from Michael Viviano of J. Viviano and Sons.

    List of Ingredients

    Minced garlic to taste (up to 1 tablespoon)

    1/4 cup olive oil

    2 ounces anchovy fillets, chopped

    16 ounces angel-hair pasta

    Roasted pine nuts, optional

    Grated Romano or Asiago cheese

    Freshly ground black pepper




    Recipe

    Saute garlic in olive oil for several minutes. Add anchovies; saute for up to 5 minutes more.

    Meanwhile, cook pasta according to package directions, then drain.

    Toss pasta with garlic, anchovies and olive oil; add pine nuts.

    Serve as a side dish, topped with grated cheese and black pepper.
