Baked Tortellini

List of Ingredients
SERVES FOUR
8-10 ounces fresh tortellini
1 tablespoon virgin olive oil
2 cloves garlic, chopped
1 onion, chopped
1 red sweet pepper, thinly sliced
1 carrot, shredded
Salt, to taste
2 cups crushed tomatoes in sauce
6 ounces mozzarella cheese, thinly sliced
2 tablespoons Parmesan or Romano cheese, grated
Recipe
In a saucepan, bring water to a boil over high heat. Boil pasta according to directions. Drain, set aside.
In a saucepan, heat oil, garlic, onion, red pepper, carrot and salt over medium-high heat. Cook, stirring, until onion is soft (3-4 minutes). Add tomatoes in sauce, bring to a simmer.
Arrange tortellini in a casserole dish, cover with sauce and top with cheese. Bake at 350 degrees until cheese is bubbly (20-30 minutes). Serve at once.
