Feta, Spinach and Garlic Sauce

Makes 4 servings
List of Ingredients
1 pound long pasta, such as fettuccine or spaghetti
2 garlic cloves, minced
6 ounces feta cheese, crumbled
4 tablespoons olive oil
Salt and freshly ground black pepper to taste
1 bag (10 ounces) leaf spinach, cleaned, stems removedRecipe
Bring a large pot of water to a boil. Add some salt and the pasta, stirring a few times to ensure that the pasta does not stick to itself. Boil vigourously for the time recommended on the package, or until pasta is tender.
Meanwhile, mix the garlic, feta cheese, oil, salt and pepper in the pasta serving bowl. Set aside.
When the pasta is tender, add the spinach leaves to the pasta pot and stir just enough to submerge all the spinach. Cook 10 more seconds and drain.
Toss the spinach and the pasta with the sauce in the bowl.
