2/3 cup all-purpose flour
1 1/3 cups cake flour
1/2 teaspoon salt
2 small eggs
3 tablespoon heavy creamRecipe
1. Process all the ingredients in a food processor for 10 seconds, until the mixture is the texture of coarse meal. Dump out onto a lightly floured work surface and knead until the dough is smooth (add more all-purpose flour if the dough is too sticky; the amount will depend partly on the humidity that day).
2. Roll out the dough according to your pasta machine's instructions, or by hand until paper thin. Cut the dough into 1/4-inch strips and let dry.
