    Tagliolini with Sausage

    List of Ingredients




    1 pound fresh tagliolini (or linguine)
    1 pound mild Italian sausage,loose or removed from casings
    1/2 cup olive oil
    2/3 cup minced scallion
    2 tablespoons dried currants
    3/4 cup fresh flat-leafed parsley
    Salt and pepper to taste

    Recipe



    Cook pasta in lightly salted water; drain. In a large skillet saute sausage in olive oil or moderatly high heat for 5 minutes or until it is lightly browned. Add scallion and currants, salt and pepper to taste. Cook until the scallion is just tender; add parsley. Add cooked, drained pasta and toss with wooden forks, until it is well combined. Transfer the pasta to a heated serving dish. Serves 4 to 6.
