Tortellini Al L'Amatrice

SERVES TWO TO THREE
1 teaspoon virgin olive oil
4 ounces pancetta or 4 slices lean smoked bacon, chopped
1-2 dried hot pepperoncini or any dried chili pepper
2 cloves garlic, chopped
2 cups canned Italian plum tomatoes in sauce, diced
8-10 ounces fresh tortellini
1/4 cup Pecorino cheese, grated
1/4 teaspoon freshly ground black pepper
Recipe
In a frying pan, heat oil, bacon and hot pepper over medium-high heat. Cook, stirring occasionally, until pepper is well-browned on all sides. Discard pepper.
When bacon is crisply browned (3-4 minutes), scoop it onto a paper towel to drain, reserving oil in pan. Add the garlic and cook until golden (2-3 minutes). Add tomatoes, bring to a simmer and reduce heat to low.
Heat water for pasta and cook according to package directions (4-6 minutes). Serve hot, sauced and garnished with bacon, cheese and pepper.
