    Basque Potatoes

    List of Ingredients




    3 pounds small new white or red potatoes
    6 tablespoon unsalted butter
    3 tablespoons olive oil
    3 large garlic cloves, crushed through a press
    1/2 cup chopped fresh parsley
    1 tablespoon minced fresh thyme or 1/2 teaspoon dried
    1 1/2 teaspoons minced fresh or crushed dried rosemary
    1 1/2 teaspoon paprika
    Dash of cayenne pepper
    1/2 teaspoon salt
    1/4 teaspoon freshly ground black pepper

    Recipe



    1. Preheat the oven to 375 degrees F. Scrub the potatoes well and pat dry.
    2. In a large roasting pan, melt the butter in the oil over moderate heat. Add the garlic, parsely, thyme, rosemary, paprika and cayenne. Add the potatoes and roll them in the saasoned butter to coat well.
    3. Bake, basting the potatoes occasionally with the butter, for about 40 minutes, or unti the potatoes are tender. Season with the salt and black pepper.
