    1 medium onion, thinly sliced
    2 garlic cloves, minced
    1 tablespoon olive oil
    4 cups peeled, diced potato
    1 teaspoon seasoned salt
    1/8 teaspoon freshly ground pepper
    1/8 teaspoon grated lemon rind
    1 cup (4 ounces) shredded Cheddar cheese
    1/4 cup fine, dry breadcrumbs
    1 tablelspoon butter, melted
    1 teaspoon chopped fresh rosemary

    Saute onion and garlic in hot oil in a large skillet until tender. Stir in potato and next 3 ingredients.
    Spoon half of potato mixture into a lightly greased 1 1/2-quart round baking dish; sprinkle with half of cheese. Repeat layers with remaining potato mixture and cheese.
    Stir together breadcrumbs, butter, and rosemary, sprinkle over casserole.
    Bake, uncovered at 400 degree for 40 minutes or until potato is tender. Yield 4 servings.
