    List of Ingredients




    2 teaspoons masala (curry powder)


    1 teaspoon ground cumin


    1 teaspoon ground coriander


    1 teaspoon turmeric


    1 clove garlic, crushed


    1 tablespoon chopped fresh ginger


    1 hot green chili pepper, cored, seeded, and finely chopped


    Salt and pepper, to taste


    2 tablespoons vegetable oil


    3 to 3 1/2 pounds cut up chicken


    1/4 cup vegetable oil


    1 lemon, cut into wedges

    Recipe



    1. Set the oven at 350 degrees.

    2. In a bowl, mix the masala, cumin, coriander, turmeric, garlic, ginger, chile, salt, and pepper.

    3. Add the oil and mix to a paste. Rub the paste onto the chicken pieces and refrigerate for 1 hour.

    4. In a roasting pan, place chicken skin side up. Brush with oil and roast for 45 minutes or until the chicken is cooked through. Garnish with lemon and serve at once.
