Almost Wild Rice
List of Ingredients
1/4 cup butter
1 twist vermicelli (figure "8" bundle)
1 cup uncooked long-grain rice
1 can (10 1/2 ounces) condensed beef broth (bouillon)
1 small can (2 or 3 oz) sliced mushrooms
1/2 medium-sized onion, grated
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 cups water
Recipe
Melt butter in a frying pan. Break vermicelli into very small pieces (about the size of rice grains) or crush. Add to butter and cook over medium heat, stiring often,until a rich brown. Add the rice, broth, mushrooms, grated onion, salt, pepper, and 1 cup water; stir.
Cover and simmer for about 45 minutes, adding the additional water during the cooking process. Makes 6 servings.
