    5 slices bacon
    1 medium onion, chopped
    2 cups chopped, peeled tomato
    1 cup long-grain rice, uncooked
    1 cup finely chopped cooked ham
    1/2 teaspoon salt
    1/4 teaspoon pepper
    1/8 teaspoon hot sauce

    Recipe



    Cook bacon in a large skillet until crisp; remove bacon, reserving 2 tablespoons drippings in skillet. Crumble bacon, and set aside. Cook onion in drippings over medium-high heat, stirring constantly, until tender. Add crumbled bacon, tomato, and remaining ingredients to skillet; cover and cook over low heat 10 minutes. Spoon mixture into a lightly greased 1-quart baking dish. cover and bake at 350 degree for 1 hour, stirring every 15 minutes. Yield 6 to 8 servings.
