    SERVES FOUR TO SIX


    1 cup raw jasmine rice
    1 organic lemon, juiced, rind grated
    1/2 teaspoon salt
    1/2 teaspoon Thai curry paste or 1 teaspoon curry powder
    1/4 cup golden raisins
    1/4 cup dried sour cherries or cranberries




    Recipe



    In a sauce pan, combine 2 cups water, rice, 1 teaspoon lemon rind, salt, curry paste and dried fruit. Bring to a boil over high heat, reduce heat to low, cover pan and simmer until rice is tender (about 20 minutes).
    Uncover pan, fluff rice with a fork, drizzle with lemon juice and let sit for 5 minutes before serving.
