1/4 cup sesame seed
6 cups crisp, torn iceberg lettuce
1/3 cup thinly sliced green onion
3 medium-sized tomatoes, cut in thin wedges
3 cups cooked, shredded chicken
1/4 cup hoisin sauce
4 tablespoons lemon juice
1/4 ground ginger
1/3 cup salad oil
Garlic salt and pepper
Place sesame seed in a large frying pan over medium heat; cook, stirring often, until golden. Set aside.
In a salad bowl combine the lettuce, green onion, tomatoes, and chicken; cover and chill 2 to 4 hours. Meanwhile, tir together the hoisin sauce, lemon juice, ginger and salad oil.
Just before serving, stir dressing, pour over lettuce mixture, sprinkle sesame seed over all, and mix well. Season to taste with garlic salt and pepper, and garnish with cucumber slices. Serves 6
