Butter- Gourmet Basil Butter

2 unpeeled garlic cloves
1/2 cup firmly packed fresh basil leaves
1 stick (1/2 cup) unsalted butter, softened
1 teaspoon Dijon-style mustard
1/2 teaspoon grated lemon rind, or to taste

In a small saucepan of boiling water boil the garlic for 10 minutes, transfer it to a plate, and let it cool. Add the basil to the boiling water and blanch it for 10 seconds. Drain the basil well, pat it dry, and mince it. In a small bowl cream the butter, add the garlic, peeled and mashed, the basil, the mustard, the lemon rind, the pepper, and salt to taste, and blend the mixture well. Let the butter stand, covered tightly with plastic wrap, in a cool place for 1 hour or chilled overnight. Serve the butter with steamed vegetables or grilled meats or fish. Makes about 2/3 cup.
