    Butter- Parsley Butter

    List of Ingredients




    2 tablespoon minced shallots
    1/4 cup dry white wine
    1 stick (1/2 cup) unsalted butter, softened
    3 tablespoons minced fresh parsley leaves
    1 teaspoon fresh lemon juice
    white pepper to taste

    Recipe



    In a small saucepan simmer the shallots in the wine over moderately low heat, stirring occasionally, until wine is evaporated. Transfer the shallots to a small bowl, let them cool, and combine them well with the butter, the parsley, the lemon juice, the white papper, and salt to taste. Chill the butter, covered, for a least 1 hour. Serve the butter on grilled meat, poultry, or fish. Makes about 2/3 cup.
